Ingredients:Â
1kg Beef skirt
Marinade
4 tbsp Worcester Sauce
2 tbsp olive oil
4 tbsp dry cider/cider vinegar
Juice of 1 lemon
Salt and Black pepper to taste
50g butter
1 finely chopped onion
1 tsp Dijon mustard
1 tsp wholegrain mustard
12 small pickled gherkins finely sliced
3 tbsp double cream
Method:
- Combine all of the ingredients on the first list to make the marinade
- Slice skirt into desired portions.
- Massage marinade into the meat and allowed to stand for 6-8 hour
- Preheat grill to medium hot then place steaks under grill and cook for 18-20 minutes, turning 3-4 times, keep brushing marinade over the steaks when turning.
- Heat the butter in a thick bottomed pan, and place in finely chopped onions, once cooked, allow to cool slightly add cream and mustards and stir.
- Add gherkins to garnish.
- Pour over the rested steaks and serve immediately.
