Marinated & Grilled Beef Print E-mail

Ingredients: 

1kg Beef skirt
Marinade
4 tbsp Worcester Sauce
2 tbsp olive oil
4 tbsp dry cider/cider vinegar
Juice of 1 lemon
Salt and Black pepper to taste
50g butter
1 finely chopped onion
1 tsp Dijon mustard
1 tsp wholegrain mustard
12 small pickled gherkins finely sliced
3 tbsp double cream

Method:

  1. Combine all of the ingredients on the first list to make the marinade
  2. Slice skirt into desired portions.
  3. Massage marinade into the meat and allowed to stand for 6-8 hour
  4. Preheat grill to medium hot then place steaks under grill and cook for 18-20 minutes, turning 3-4 times, keep brushing marinade over the steaks when turning.
  5. Heat the butter in a thick bottomed pan, and place in finely chopped onions, once cooked, allow to cool slightly add cream and mustards and stir.
  6. Add gherkins to garnish.
  7. Pour over the rested steaks and serve immediately.
