Roasted Leg of Lamb with Mint Jelly Glaze Print E-mail

Ingredients:

1 bone in leg of lamb
Cooking oil
Salt and pepper
4 Tablespoons of mint jelly  

Method:

  1. Pre-heat oven 200ºC/Gas 6/400ºF.
  2. Heat roasting tin with 2-3 tablespoons of oil.
  3. Season the meat generously with salt and pepper, add to the hot roasting pan fat side down to colour & seal the surface, turn meat and cook until golden.
  4. Cook for
    15 mins per lb/33 mins per kg + 15 mins for medium rare
    20 mins per lb/44 mins per kg + 20 mins for medium
    25 -30 mins per lb/55-66 mins per kg + 25 -30 mins for well done.
  5. 15 minutes before the end of cooking cover with heated mint jelly (heat until just soft) and coat the leg of lamb evenly.
  6. Remove from oven and allow to stand before carving
  7. Serve with roasted potatoes, pan fried shallots and steamed broccoli florets
